Also make sure you consider the size of your hatch opening - some kayaks have very tiny openings and its hard to get most camping things in let alone a huge water container. I'd try a large platapus type container so you could even put it into your hatch and then fill it up when it was inside. Maybe the MSR Dromedary Water Bag (product #4000-49) or something similar.
